SAFFRON
Undoubtedly the most precious spice in the world, it takes around 4300 of the breathtakingly beautiful royal purple flowers of the crocus plant to produce a single ounce of saffron. The golden spice is obtained from the thread-like stigmas, exactly three of which are present in every flower. It is so fabulously expensive that a hundred dollars would buy less than an ounce of good quality saffron. Fortunately, due to its intense flavoring and coloring power, a tiny pinch would suffice in any recipe.

Saffron has been treasured since antiquity for four reasons: (1) its aroma (it was used as a perfume), (2) its color (it was used as a dye - golden in color), (3) its flavor (it was used as a seasoning - a unique but slightly bitter taste), and (4) its psychological and medicinal effect (it was used to revive the spirit - making one cheerful and optimistic). 
Saffron is mentioned in an English healing manual dating from 10th century A.D.  In the 16th century there was an English saying that a cheerful, jovial person must have "slept in a bag of saffron."

Saffron is mentioned as one of the chief spices in the mystical garden described in the Song of Songs, the beautiful love story that models the kind of relationship G-d wants to have with His people.   Its costliness reminds us of the fact that "we have been bought with a price"(1 Cor 6:20) which illicits our response of "joy unspeakable and full of glory" (1Peter 1:8)  Saffron speaks of a joyful heart, pleasing to G-d.
